Creamy and Cheesy Artichoke Dip

You can pretty much bet that if you serve something creamy and cheesy and warm, it is going to be a hit in most cases. This Creamy Cheesy Artichoke Dip certainly was. The fact that I had it at a baby shower almost a year ago and still remember how grown women stood around the serving table politely jockeying for the last bite, let me know that I should definitely share it with y’all. This is one you are going to want to file away and have on standby.

Creamy Cheesy Artichoke Dip

  • 1 (15 oz.) can of quartered artichoke hearts, drained and chopped
  • 3-4 green onions (Tips on cutting green onions)
  • 1 (3 oz.) can of mild green chilis or jalapeños (more or less to your taste)
  • 1 cup grated Parmesan cheese
  • 1 cup mayonaise
  • 1 block (8 oz.) cream cheese, softened (Tips on softening cream cheese)

  1. Preheat oven to 350 degrees.
  2. Spray 8x8 baking dish with cooking spray.
  3. Combine all ingredients.
  4. Bake 20-30 minutes until golden brown.

Here is where I usually post a pic of the finished dish in all its glory. Well I was running around at the last minute trying to get the kitchen straightened back up before the guests arrived (more on this later as I know I am not the only one who hasn’t mastered this challenge), and I turned the oven off while the Creamy Cheesy Artichoke Dip was still doing its thing. It was only during the Facebook Live video I tried to squeeze in that I realized that the dip was missing and as in fact sitting in a cooling oven. Fortunately, I had time to get it back in and was able to add to the table right as my friends were arriving. So you will just have to imagine the most beautiful Creamy Cheesy Artichoke Dip you have ever seen.

At the shower I mentioned earlier, we had the dip on scoops, but I served on various crackers and bread this time. It refrigerates and reheats well should you have any leftovers.

So do you love a hot cheesy dip as much as I do?  I would love to try your favorite.

By the way, you can always share your creations with me on Instagram and I would love to for you to join our Facebook Group to share with our friends who also love making great food for good friends. Until then…

Stay humble, work hard, be kind.
