Cranberry Apple Pecan Chicken Salad

Chicken salad is one of my absolute favorite dishes ever. I like all varieties, but this Cranberry Apple Pecan Chicken Salad may just be the best I have ever made. The Granny Smith apples, green onions, plus the combo of mayonnaise, Greek yogurt and Dijon mustard really kick up the tang.  The sweetness of the cranberries keeps it balanced and the toasted pecans add an unexpected crunch.

I recently served this for a Sunday afternoon small group gathering with a few other spreads, assorted crackers and both plain and toasted bread. (Check out the Facebook live for the whole spread).  It would make a great sandwich or a topping for a green salad. I took the leftovers for lunch the next day and honestly just ate it straight out of the bowl.

Cranberry Pecan Chicken Salad

Behind the Scenes Belle shares what could be the perfect Chicken Salad - featuring Granny Smith apples, dried cranberries, toasted pecans and a touch of Greek yogurt and Dijon mustard to balance the sweet and tangy. It's perfect for sandwiches, salads and to serve at showers and quick gatherings.


  • 3 c. cooked chicken breast or rotisserie - pulled or chopped (How to get the most tender boiled chicken)
  • 1/2 Granny Smith Apple - cut in small chunks
  • 1/3 cup Cranberries, dried
  • 1/2 cup Toasted or candied pecans
  • 2 Green Onions - diced (Tips on cutting green onions)
  • 1 tsp Dijon Mustard
  • 1/4 cup Greek yogurt or light sour cream, plain
  • 1/2 cup Mayonnaise
  • 1/2 tsp Onion Powder
  • 1/2 tsp Black Pepper
  • 1 tsp Salt


  1. In a large bowl, combine chicken, apples, cranberries and onions.
  2. In a separate bow, combine mustard, mayonnaise, yogurt, onion powder, salt and pepper.
  3. Combine all of the above and refrigerate for at least one hour. If it is not moist enough for your liking, add an extra spoon of mayonnaise and/or yogurt.
  4. Add toasted pecans immediately before serving.
